How to Brew the Perfect Cup: Pour-Over, French Press & Cold Brew

Why Brewing Method Matters

Great coffee starts with great beans but the way you brew them determines everything that ends up in your cup. At Hill Reserve Coffee Company, we source exceptional single-origin coffees and thoughtfully crafted blends so that every brewing method can shine. Here's your guide to three of the most popular methods: pour-over, French press, and cold brew.

Pour-Over: Clean, Bright, and Nuanced

Pour-over brewing is the go-to method for coffee lovers who want to taste every layer of a bean's flavor. The slow, controlled pour allows hot water to extract the coffee's full complexity making it ideal for our lighter, more delicate single-origin coffees.

What You'll Need

  • Pour-over dripper (Hario V60, Chemex, or similar)
  • Paper filter
  • Gooseneck kettle
  • Freshly ground coffee (medium-fine grind)
  • Scale and timer

The Method

  1. Heat water to 200°F (just off the boil).
  2. Rinse your filter with hot water to remove any papery taste, then discard the rinse water.
  3. Add coffee — use a 1:15 ratio (e.g., 20g coffee to 300ml water).
  4. Bloom: Pour twice the weight of water over the grounds (40ml) and wait 30–45 seconds. This releases CO₂ and primes the grounds for even extraction.
  5. Pour slowly in circular motions, adding water in stages over 3–4 minutes total.
  6. Enjoy immediately.

Best beans for pour-over: Try our Tanzania (pear, floral, jasmine, strawberry) or Colombia (dried orange, berry, chocolate) for a bright, expressive cup.

French Press: Bold, Full-Bodied, and Rich

French press is an immersion method — the coffee steeps directly in hot water, producing a heavier body and more robust flavor. It's forgiving, requires no paper filter, and lets the natural oils of the bean come through.

What You'll Need

  • French press
  • Coarsely ground coffee
  • Hot water (200°F)
  • Timer

The Method

  1. Add coffee — use a 1:12 ratio (e.g., 30g coffee to 360ml water).
  2. Pour hot water over the grounds and stir gently.
  3. Place the lid on top (plunger up) and steep for 4 minutes.
  4. Press slowly and pour immediately to avoid over-extraction.

Best beans for French press: Our Cowboy Blend (cocoa, caramel, vanilla) and Bali Blue (dark chocolate, molasses, brown sugar) are made for this method.

Cold Brew: Smooth, Sweet, and Low-Acid

Cold brew is brewed with cold water over an extended period — typically 12–24 hours. The result is a concentrate that's naturally sweet, incredibly smooth, and much lower in acidity than hot-brewed coffee. It's perfect for warm mornings or as an afternoon pick-me-up over ice.

What You'll Need

  • Large jar or cold brew pitcher
  • Coarsely ground coffee
  • Cold or room-temperature filtered water
  • Fine mesh strainer or cheesecloth

The Method

  1. Combine 1 cup of coarsely ground coffee with 4 cups of cold water in a jar.
  2. Stir to ensure all grounds are saturated.
  3. Cover and refrigerate for 12–24 hours (longer = stronger).
  4. Strain through a fine mesh strainer or cheesecloth.
  5. Serve over ice, diluted 1:1 with water or milk if using as a concentrate.

Best beans for cold brew: Our Cold Brew Coffee blend is specifically crafted for this method — smooth chocolate, toffee, and floral tones that shine cold.
